4 c frozen shredded hash brown potatoes
1/4 t salt and pepper
3 T butter, divided
1 med onion, chopped
1/2 c green pepper, chopped
1/2 c fresh mushrooms, chopped
2 t flour
3/4 c fully cooked ham, diced
3 eggs, beaten
1/2 c milk
1/2 c shredded cheddar cheese

Preheat oven to 350°. In a large skillet saute hash browns, salt and pepper in 2 T butter until golden brown. Press into bottom and up sides of greased 9” pie plate. In same skillet saute onion, green pepper, and mushrooms with remaining 1 T butter. Remove from heat, sprinkle with flour. Stir in ham, eggs and milk. Bake at 350° for 25 minutes. Sprinkle with cheese, bake 5 minutes longer or until knife inserted near center comes out clean. Let stand 10 minutes before cutting.
