1 package (8 ounces) pitted dates
1 package (6 ounces) dried apricots
1 ¾ cups sweetened shredded coconut – divided
1 cup chopped pecans
2 tablespoons firmly packed brown sugar
2 tablespoons orange juice
½ teaspoon grated orange zest
Place dates, apricots, 1 cup coconut, pecans, brown sugar, orange juice and orange zest in a food processor.
Process until fruit and nuts are finely chopped.
Shape mixture into two – 6 inch long rolls – roll in remaining ¾ cup coconut.
Wrap into plastic wrap and store in the refrigerator.
Cut rolls into ¼ inch slices.
2 rolls – about 20 slices each.
