Roasted Sweet Potatoes ~ submitted by Sharon Schauer, of Glencoe

Ingredients
1 lb carrots peeled and chopped
1 lb sweet potatoes peeled and chopped
1 cup fresh cranberries
2 Tbls extra virgin olive oil
2 Tbls pure maple syrup
2 Tbls honey
1 tsp coriander
1 tsp sea salt
1/4 tsp pepper

Directions
Preheat oven to 350.  In a large bowl combine carrots, sweet potatoes, cranberries, olive oil, maple syrup, honey, coriander, salt and pepper.  Spread onto a large rimmed baking sheet. Bake 20-30 minutes or until carrots and sweet potatoes are soft. May be top with 2 Tbls of fresh basil or sage if desired
