Purple Cabbage Slaw ~ submitted by Ellen Anding of Ohio

Ingredients
Yogurt Dressing
1/2 cup whole mill yogurt
3 Tbls minced shallots
2 Tbls olive oil
1 Tbls apple cider vinegar
3/4 tsp fine sea salt
1/4 tsp pepper
Slaw
5 cups thinly sliced red cabbage
1/2 cup chopped cilantro leaves

Directions
In a salad bowl, wisk together yogurt, shallots, oil, vinegar, salt and pepper. Add cabbage and cilantro (if using) and toss to combine. Refrigerate for at least 1 hour prior to serving. Toss again just before serving.
