Submitted by Joann Kilmer – “With fresh peaches coming in now – this is the perfect quick dessert. Great served with a scoop of ice cream on fresh backed cobbler.”
Melt 1 stick of butter in bottom of glass cake pan
In bowl mix:
1 C. milk
1 C. sugar
1 C. flour
1 tsp. baking powder
Dash of salt
Stir this together and pour over butter in pan
Cover batter with 1 qt. fruit – if using fresh peaches, skin removed; add some sugar to taste and toss before putting on top of batter.
Do NOT stir this – the batter will rise to the top as it bakes and absorbs the flavor of the fruit.
Bake at 350* for 1 hour. Can be served with whipped cream also.
Other fruits can be substituted for peaches (cherries, blackberries); canned fruit can be substituted, but drain well before use.
